It’s fruity

It’s yummy, it’s easy, it’s fast and also healthy!

I made this yumminess yesterday since we were getting together with our friends Stephanie and Kollin for a “Healthy” dinner. Steph made a super delish and healthy pizza (recipe to come) and I was in charge of the salad and dessert! I made these once before for a baby shower and they were a hit so I thought I would give it a go once more. Needless to say, they were gone by the end of the night. 🙂 It was such a fun evening and Oliver would agree. He kept trying to take Stephanie or Kollin to go play with him, he made some new friends. And once we got done talking about music, business, and Kollin’s love for the Bachelor series, 😉 we finally let them leave our house, which was pretty late.

24 wonton wrappers
2 tablespoons of margarine or butter, melted
1/3 cup organic strawberry fruit spread
1 1/2 cup yoplait lemon burst yogurt
1 1/4 cup fresh blueberries, blackberries, or raspberries

1. Preheat oven to 350F

2. Using a 12-cup muffin pan or two 6-cup muffin pans, line each cup with a wonton wrapper. Brush wonton wrappers with a little butter. Place a second wrapper diagonally on top of each of the first ones, making sure that the points of the wrappers make sides to the cup. Brush second wrapper with a little butter. Bake 10 minutes, or until golden brown. Cool. Remove from pan.

3. Spoon about 1 teaspoon of all-fruit spread into each wonton shell.

4. Place yogurt in a medium bowl. Fold in 1 cup berries. Spoon yogurt mixture evenly into wonton shells. Top with remaining 1/4 cup berries.
